BIOSKETCH
Kathryn Hughes was born and raised in San Diego, CA, to Robert and Carol Hughes. She attended Grossmont College directly out of high school from 2007-2011, earning her Associates of Arts in General Studies while making honors. Kathryn took her first nutrition class as an elective course in the summer of 2009. After getting a taste of what the nutrition field was like, her passion for health began to grow. Nutrition became a huge part of Kathryn’s life after she was unexpectedly diagnosed with Type 1 Diabetes in October of 2010. From that day forward she knew she wanted to help people like her who have struggled with the dietary changes needed to obtain a healthy lifestyle associated with a life long disease. After continuing her education in junior college and completing several prerequisite courses, she decided to pursue her education further and applied to San Diego State University for a Degree in Foods and Nutrition.
After being accepted into San Diego State University for the Fall 2012 semester, Kathryn began completing an increased number of nutrition courses in cultural foods, medical nutrition therapy, quantity food production, community health, advanced nutrition, lifestyle nutrition, just to name a few. This is also when Kathryn learned about the Didactic Program in Dietetics (DPD). She is currently completing her fourth and final semester at SDSU and is balancing a part-time job with her coursework to complete her bachelor’s degree and the DPD Program.
Kathryn is currently holding a part time job as an executive office assistant for a window cleaning company located in San Diego, CA. Also, she has been involved with volunteering within her community at Feeding America, the San Diego Food Bank, WIC and Fill-A-Belly. Outside of work and school, Kathryn loves to spend time with her husband and three dogs. She enjoys going to the desert, participating in off-road sports, cooking, camping, hiking, dancing, snowboarding, crafting and just being outside.
